Elevate your culinary game with our tender and flavorful Tenderloin Side Muscle, aka "the chain". This cut literally comes from the side of the tenderloin. The tenderloin we all know and love as the "filet mignon" has a tapered end and a fatty butt end and along the length  there is a narrow strip of loosely attached meat and fat often referred to as the “chain.”

This uncommon cut requires some trimming, but the meltingly tender result is well worth it. We love to use this in "chopped" dishes - the tacos and hibachi are bomb!
